What spanish-speaking country in Latin America (ie,  not Spain) would you recommend and why? Planning to spend one week at the very end of the year (the week between Xmas ans NYE).

It would be helpful if you could be more specific about what you are looking for during your visit.  Since you specify "spanish-speaking" I will leave Brazil out of my responses:

* Sexcation: Mexico, Colombia, Dominican Republic, Cuba

* Tourism/History:  Ecuador, Peru, Mexico, Argentina

*  Ecoturism: Costa Rica

*  Food Tourism:  Argentina, Peru, Mexico

*  Beaches:  Mexico, Dominican Republic
