One of the features of the new format seems to be that we have to log in every time. Is that really necessary? What purpose does it serve?

As BG says, tick the "remember me" box.

To answer your question, though, web servers do not keep track of you. They don't remember you. Every time you visit you're a new visitor, even if you visited two minutes prior. Every time you click a link in the MC, you are a brand new visitor. That is just the way web servers work.

Cookies were invented to provide the illusion of preserving state, and were immediately derided as security risks. The site gives your browser a cookie when you visit, and that cookie is sent back to the server on every visit until the cookie expires. State is maintained in the cookie, which is stored on your computer.

Unless you take steps to avoid the cookie's timeout (tick the "remember me" box), your cookie will expire. Additionally, browsers have individual settings for expiring cookies that can override settings in the cookie itself, and your domain admin can also force expiration policies on all computers on the domain.
